Writer Zoë Hopkins' banana pancake recipe is perfect for a sweet tooth.

Caramelized banana pancakes bring writer Zoë Hopkins home to her childhood in New York. “This is my ultimate comfort breakfast,” she tells Family Style. “It never fails to make me feel like a kid again.” Whenever her sweet tooth kicks in, she reaches for her family recipe. What makes these pancakes shine? For starters, the banana is in the batter and caramelized on top, alongside a hearty handful of granola and a drizzle of maple syrup.  

Ingredients

Caramelized banana topping:

  • 1 banana
  • Butter
  • 1/4 cup granola (hold until your pancakes are done)

Pancakes:

  • 1/4 cup milk
  • 1/4 cup greek yogurt
  • 1/2 cup flour 
  • 1/2 tablespoon brown sugar 
  • 1/2 teaspoon baking powder 
  • 1/2 teaspoon baking soda 
  • 1/2 teaspoon of cinnamon 
  • Pinch of salt
  • 2 tablespoons butter (melted)
  • 1 banana 

Instructions

Caramelized banana topping:

  1. Slice a banana lengthwise and then into horizontal pieces of two to three inches.
  2. Melt a bit of butter in a pan and cook the bananas about about three to four minutes on each side, or until golden brown.

Pancakes (makes 4):

  1. Chop 1 banana into dime-sized pieces.
  2. Combine dry ingredients.
  3. Whisk together melted butter, milk, and greek yogurt.
  4. Pour wet ingredients into dry ingredients and whisk until completely smooth.
  5. Grease a pan with butter.
  6. Cook pancakes two to three minutes on one side, or until golden brown (check with spatula).
  7. Flip and cook two minutes on the other side.
  8. Garnish pancakes with caramelized banana and granola topping, served with maple syrup.
