Fire Island Salad

Terence Koh perfected his fiery tomato salad during a BOFFO residency last summer.

Terence Koh first made a name for himself as a New York artworld troublemaker-turned-darling in the early aughts. He’s since stepped out of the strobelight and settled down in Los Angeles, where he most recently created KOHFEE, 2024, an installation that doubled as a pop-up coffee shop inside an immersive cave crafted out of raw earth and cow dung for Make Room gallery. The Beijing-born, Ontario-raised artist works with natural materials to create sculptures and installations that often work in tandem with his performances. For his early installation nothingtodo, 2011, at the now-defunct Mary Boone Gallery in New York, he circled an enormous mound of salt on his knees dressed completely in white for nearly a month. Similarly, his dish creates something spectacular from everyday life. For Family Style, he shares a salad he concocted during his BOFFO residency on Fire Island last summer: “GG’s Fire Island Salad.”  “Garnish with flowers and sunshine for a summer salad that is cool and fiery,” Koh recommends.

Ingredients

  • Drizzle of hot chili oil
  • Handful of basil
  • 4-5 heirloom tomatoes

Instructions

  1. Choose tomatoes in different shades of fire colors.
  2. Slice medium thick and drizzle hot chili oil and basil over the tomatoes.
  3. Garnish with fire flowers and sunshine.
